Primal Banana Chocolate Chip Muffins

So, for those of you who don't know, our family tries to eat a Primal Diet most of the time. This means no grains, added sugar or processed foods. For more information on Primal eating, please reference marksdailyapple.com or the book "The Primal Blueprint" by Mark Sisson. Here's a great recipe I came up with by combining a couple recipes together. Yummy!!

Banana Chocolate Chip Muffins

Ingredients:
1/2 Cup Coconut Flour
1/2 tsp. Baking Soda
A pinch of Salt
4 Eggs
1/3 Cup Coconut Milk
1 Tbsp. Vanilla Extract
1/4 Cup Coconut Oil, melted
2 Bananas, mashed
1 Cup Dark Chocolate Chips

Directions:
*Preheat Oven to 350 Degrees

*Mix coconut flour, baking soda, and salt in small bowl and set aside.

*In large bowl, mash bananas. Add eggs, coconut milk, vanilla, and coconut oil. Mix well.

*Add in dry ingredients until combined. Fold in chocolate chips.

*Divide into 12 muffins.

*Bake 20-25 minutes.

Enjoy warm with a little butter:)
