We LOVE these!! They are yummy served warm with butter & syrup, or as a bread substitute for sandwiches & burgers.
Ingredients:
2 Cups Baby Spinach
4 Eggs
1/4 Cup Unsweetened shredded coconut
1/4 Cup slivered almonds
Blend all ingredients in food processor. Let sit about 10 minutes to thicken. Cook in a buttered pan over medium heat, just like pancakes (about 1-2 minutes each side).

Kate gave me a piece to try the other day... I am not a huge fan:) It is the coconut I am sure!
